What is Orecchiette Pasta

Ingredients

  • 1/2lb orecchiette pasta
  • 1/2 onion
  • 3 garlic cloves
  • 1 tomato
  • 1/2lb broccoli rabe
  • 2 sweet italian sausages
  • 2 tbsp capers
  • 1/4 cup dry white wine
  • 1/2 cup pasta water
  • 1/2 cup Parmigiano-Reggiano
  • 4 tbsp homemade authentic italian pesto

Steps

  1. Dice the onion and set it aside. Slice the garlic cloves and dice the tomato.
  1. Blanch the broccoli rabe: Bring a pot of salted water to a boil. Add the broccoli rabe and blanch for 30 seconds. Transfer to a bowl of cold water.
  1. Cook the Orecchiette pasta: In the same pot, bring salted water to a boil. Add the pasta and cook for 8 minutes or until al dente. Drain and transfer to a sheet pan. (Save a cup of pasta water for later on!) Drizzle with olive oil to prevent sticking.
  1. Sear the sweet Italian sausages in a preheated pan over medium heat for 1-1.5 minutes, until browned. Transfer to a bowl and set aside.
  1. In the same pan, add olive oil and sauté the diced onion for 1 minute. Add the sliced garlic and sauté for an additional minute.
  1. Deglaze the pan with dry white wine, reducing it by 75 percent. Add diced tomatoes, blanched broccoli rabe, and capers. Sauté for a couple of minutes.
  1. Add the seared Italian sausages to the pan. Season with salt and black pepper. Add the cooked pasta and pour in the cup of pasta water we saved.
  1. Increase the heat to high and cook for 2-3 minutes, allowing the flavors to meld.
  1. Remove from heat and stir in freshly grated Parmigiano-Reggiano. Adjust seasoning if desired.
  1. Transfer to a bowl and mix in pesto. Garnish with additional Parmigiano-Reggiano and chopped parsley.
