What is Orecchiette Pasta
Orecchiette pasta is a popular type of pasta that originated in the Southern Italian region of Apulia. Made from durum wheat semolina, this small, ear-shaped pasta has a mild, nutty flavor and a slightly chewy texture. It is often used in pasta salads, soups, and hearty stews, and pairs well with sauces and sautéed vegetables. For those looking to enjoy a taste of authentic Italian cuisine, orecchiette pasta is a must-try dish.

This Kyoku clever knife came in a nice package and it enclosed the knife guard cover so it's easier for you to store it; a great gift for a person who loves to cook; Very comfortable to use it, great for chopping and slicing.
Steps
- Dice the onion and set it aside. Slice the garlic cloves and dice the tomato.
- Blanch the broccoli rabe: Bring a pot of salted water to a boil. Add the broccoli rabe and blanch for 30 seconds. Transfer to a bowl of cold water.
- Cook the Orecchiette pasta: In the same pot, bring salted water to a boil. Add the pasta and cook for 8 minutes or until al dente. Drain and transfer to a sheet pan. (Save a cup of pasta water for later on!) Drizzle with olive oil to prevent sticking.
- Sear the sweet Italian sausages in a preheated pan over medium heat for 1-1.5 minutes, until browned. Transfer to a bowl and set aside.
- In the same pan, add olive oil and sauté the diced onion for 1 minute. Add the sliced garlic and sauté for an additional minute.
- Deglaze the pan with dry white wine, reducing it by 75 percent. Add diced tomatoes, blanched broccoli rabe, and capers. Sauté for a couple of minutes.
- Add the seared Italian sausages to the pan. Season with salt and black pepper. Add the cooked pasta and pour in the cup of pasta water we saved.
- Increase the heat to high and cook for 2-3 minutes, allowing the flavors to meld.
- Remove from heat and stir in freshly grated Parmigiano-Reggiano. Adjust seasoning if desired.
- Transfer to a bowl and mix in pesto. Garnish with additional Parmigiano-Reggiano and chopped parsley.
