Knife Finish
The Art and Function of Blade Surfaces
Just as the shape of a knife determines its purpose, the finish of a blade influences its performance, durability, and aesthetic appeal. From rustic hammered textures to refined mirror polishes, each finish offers unique advantages—whether it’s reducing friction, resisting stains, or simply catching the eye.

DAMASCUS
Damascus pattern is crafted through the modern technique of laminating and forge-welding multiple layers of steel, distinguished by its striking wave, rose, or watery light and dark pattern. Each blade in Kyoku's Shogun Series consists of 67 layers of metal, repeatedly folded to resemble a miniature river sculpted into the steel. You can trace each layer and twist of the metal, almost feeling the echoes of centuries of hammering.
Beyond its captivating artistic appearance, Kyoku’s Damascus steel excels in performance. The combination of soft and hard steels delivers both exceptional toughness (reducing chipping) and a razor-sharp edge. Kyoku further enhances functionality with sandblasting technology, which helps release food from the blade and reduces cutting resistance.
Tsuchime
In Japanese, Tsuchime means “hammered pattern.” This technique not only enhances surface hardness and scratch resistance but also creates microscopic air pockets that reduce drag and promote food release. With its raw, textured appearance reminiscent of stone and natural elements, Tsuchime blades effortlessly complement rustic and organic home styles.
FISH-SCALE
In Japanese culture, the koi fish symbolizes good fortune.
Inspired by the structure of fish scales, Kyoku’s KOI Series features a meticulously applied chemical etching technique that creates uniform scale-like grooves across the blade surface. This controlled process ensures precise depth without compromising the steel’s integrity. The textured surface significantly reduces food sticking, while also enhancing wear and corrosion resistance.
Brushed
The beveled laser-polished finish achieves a finely brushed texture on the blade surface, combining precision grinding with laser technology for a sleek and refined appearance. Aesthetically, the subtle linear gloss conveys a sense of modern sophistication and meticulous craftsmanship, enhancing visual depth under light while resisting visible scratches and fingerprints. This refined surface complements both traditional and contemporary kitchen environments, reflecting a balance of elegance and functionality.
Kyoku's Samurai and Daimyo Series feature this classic finishing technique.
